Activity 3: Stir-Fried Rice with Vegetables
Now that we have already gotten to know the basics and the culture, it is time for the practical part!
In this activity (by: Dr. Galit Boutsar), we will learn about the fastest and most common cooking method in China: Stir-Fry.
We will understand why a concave wok is used, and how cutting vegetables into thin strips saves time and energy.
This is an excellent opportunity to practice combining a variety of vegetables and discover that dishes with a high percentage of vegetables are particularly delicious.
Come prepare together a simple and classic recipe for stir-fried rice with vegetables!
Fast Stir-Frying: The Chinese Method for Vegetable Variety
Vegetables are a central ingredient in Chinese cuisine. Many meat dishes contain 50-70% vegetables.
Exploring Chinese cuisine is a good opportunity to expose children to eating cooked vegetables (if they do not already eat them) or to expand their variety of vegetables.
You can start with more familiar vegetables (carrot, pepper) and later add additional vegetables: zucchini, sprouts, mushrooms, etc.
It is highly recommended to involve the children in choosing and cutting the vegetables, and to encourage them to design a dish with a variety of colors.
Stir-frying or stir-and-fry is a common cooking method in Chinese cuisine of all types.
The frying is done quickly to save energy, which is why the Chinese use a wok that retains heat perfectly. They cut the food into thin strips or small cubes so that it does not require a long frying time.
The wok is a pan with a concave bottom found in almost every home in China.
This pan heats up quickly, with a relatively low investment of energy. However, it quickly loses its heat when the wok is removed from the energy source, a property that allows for a rapid halt to the cooking process.
This is due to the concave shape of the pan, which allows the food to be close to the heat source (the fire), as well as the material the pan is made of – a metal that conducts heat well. Therefore, quick heating and quick cooling are both made possible.
